What is Toffee?

Toffee is a delicious candy! The texture is similar to peanut brittle or a Butterfinger. It crunches or snaps when you bite into it, but then melts in your mouth. The flavor can be compared to brown butter or caramel, though it is richer in flavor than both.

English toffee is typically buttery in flavor and often includes toasted almonds and chocolate. The almonds are usually mixed into the toffee, adding extra crunch and flavor throughout. It can also be found coated in chocolate and crushed almonds, adding to the deliciousness.

Ingredients

English toffee uses only a handful of ingredients:

Butter – gives the toffee a rich and creamy flavor and smooth texture.

Sugar – caramelizes when heated to create a deep and toasty flavor.

Vanilla – adds a bit of warmth and depth.

Salt – just a bit to highlight the flavors and make everything more well-rounded.

Easy Homemade English Toffee

Equipment

  • Candy Thermometer
  • 9 x 13 baking dish
  • parchment paper

Ingredients
  

  • 1 cup (2 sticks) (226 g) butter
  • 1 cup (190 g) sugar
  • ¼ tsp salt
  • 2 tsp vanilla extract
  • 1 cup (about 125 g) roasted almonds finely chopped, divided
  • 1 cup milk or semi-sweet (160 g) chocolate chips

Instructions
 

  • Line a 9 x 13 baking pan with parchment paper. Set aside.
  • Add butter, sugar, and salt to a heavy-bottomed saucepan over medium heat. Mix until fully incorporated and butter is not separated from the sugar.
  • Cook over medium heat, stirring frequently until rich golden brown in color and candy thermometer reaches 285℉.
  • Remove toffee from heat, stir in vanilla extract and ½ cup of chopped almonds.
  • Quickly pour toffee onto parchment-lined baking pan.
  • Sprinkle chocolate chips over hot toffee and let sit for 1-2 minutes to soften.
  • Spread chocolate into an even layer and immediately sprinkle remaining ½ cup of chopped almonds over chocolate. Press almonds lightly into chocolate. Allow to cool completely until hardened.
  • Carefully break or chop into pieces and enjoy.
