Super Peanut-Buttery Cookie Recipe
As a peanut butter lover, I find that most peanut butter cookies just aren’t peanut buttery enough. To remedy that, I’ve created the ultimate peanut butter cookie recipe, by packing peanut butter in every place I could. I’ve added peanut butter chips to the peanut butter cookie base, for extra bursts of flavor. Each cookie is also filled with a soft peanut butter filling. The result is an ultra peanut-buttery cookie that’s maxed out on peanut butter flavor!
How to Fill the Cookies
To add the peanut butter center to these cookies, we have to stuff the cookie dough with the peanut butter filling before they’re baked. The texture of the peanut butter filling is like a soft dough, so it can be rolled into little balls. (Tip – you may want to put the peanut butter filling balls in the freezer while you prep the dough) To fill a cookie, take a 2 tablespoon ball of dough and flatten it into a disk in your palm. Place a peanut butter filling ball in the center of the disk and pull the sides of the disk up to the top and pinch to seal. Roll the dough between your hands to form a ball. You can then place on the prepared cookie sheet to bake.

Traditional Peanut Butter
This cookie recipe uses traditional peanut butter, think brands like Skippy or Jif, not natural peanut butter. Traditional peanut butter is more similar brand to brand, so it produces consistent results. Natural peanut butters tend to separate and can cause differing results when used in baking. For the best results, use a traditional creamy peanut butter in this recipe. I often use Skippy.

- 2 tbsp (#40) cookie scoop

Ultimate Peanut Butter Cookies
Ingredients
Cookie Dough
- ½ cup (1 sticks) (113 g) butter, softened
- ¾ cup (165 g) dark brown sugar
- ¼ cup (60 g) sugar
- ¾ cup (195 g) creamy peanut butter (Skippy or Jif-style)
- 1 egg
- 1 tbsp vanilla extract
- ½ tsp baking soda
- ½ tsp salt
- 1 ½ cups (180 g) flour
- 1 cup (160 g) peanut butter chips
Peanut Butter Filling
- ¾ cup (195 g) creamy peanut butter (Skippy or Jif-style)
- ½ cup (60 g) powdered sugar
- ¼ tsp salt
Instructions
Prepare the Filling
- In a bowl, combine peanut butter, powdered sugar, and salt until smooth. Roll into 30 teaspoon-size balls. Place on a parchment-lined tray in the freezer while preparing the dough.
Prepare the Cookie Dough
- Preheat oven to 350℉.
- Cream together butter and sugars.
- Mix in peanut butter until combined.
- Add egg, vanilla, baking soda, and salt. Mix until well combined.
- Mix in flour until just combined.
- Mix in peanut butter chips.
Filling & Baking the Cookies
- Scoop 2 tbsp of dough and flatten in the palm of your hand. Place a peanut butter filling ball in the center and wrap the cookie dough around it to seal it inside. Place onto a prepared baking sheet. Repeat for each cookie, keeping cookies about 3 inches apart.
- Bake for 8-10 minutes or until the cookies look matte on top and the undersides are lightly browned. Allow to cool for 1-2 minutes before transferring to a wire rack to cool completely.
