If you are a peanut butter lover, these cookies are the ones for you! They have a peanut butter cookie base with peanut butter chips scattered throughout and a soft peanut butter filling for the ultimate peanut butter experience!
¾cup (195 g)creamy peanut butter(Skippy or Jif-style)

½tspbaking soda

1 ½cups (180 g)flour
1cup (160 g)peanut butter chips
Peanut Butter Filling
¾cup (195 g)creamy peanut butter(Skippy or Jif-style)
½cup (60 g)powdered sugar
¼tspsalt
Instructions
Prepare the Filling
In a bowl, combine peanut butter, powdered sugar, and salt until smooth. Roll into 30 teaspoon-size balls. Place on a parchment-lined tray in the freezer while preparing the dough.
Prepare the Cookie Dough
Preheat oven to 350℉.
Cream together butter and sugars.
Mix in peanut butter until combined.
Add egg, vanilla, baking soda, and salt. Mix until well combined.
Mix in flour until just combined.
Mix in peanut butter chips.
Filling & Baking the Cookies
Scoop 2 tbsp of dough and flatten in the palm of your hand. Place a peanut butter filling ball in the center and wrap the cookie dough around it to seal it inside. Place onto a prepared baking sheet. Repeat for each cookie, keeping cookies about 3 inches apart.
Bake for 8-10 minutes or until the cookies look matte on top and the undersides are lightly browned. Allow to cool for 1-2 minutes before transferring to a wire rack to cool completely.
