Quick Lemon Glaze

If you’re looking to add a little extra flare to a dessert, this quick lemon glaze recipe may be just what you need. Drizzle over muffins, cakes, pancakes, oatmeal, scones and more to add a delicious burst of lemon flavor. It’s super simple and quick to prepare, taking only minutes, and is a wonderfully refreshing addition to so many desserts!

Only 2 (or 3) Ingredients

With only two ingredients, fresh lemon juice and powdered sugar, this lemon glaze comes together so fast (hence the name – quick lemon glaze)!

You can adjust the amount of lemon juice or powdered sugar to change the consistency. A higher juice to sugar ratio will give you a more fluid glaze, better for drizzling, while a lower juice to sugar ratio will give you a thicker glaze, better for coating — it’s totally up to you.

Lemon zest, an optional third ingredient, can be added to the glaze to increase the lemon flavor!

Bottled vs. Fresh Lemon Juice

It may be tempting to use bottled lemon juice, but I strongly recommend using fresh lemon juice in this recipe – the taste difference is totally worth it!

How to Use Lemon Glaze

The list of ways you can use lemon glaze is endless! Here are just a few:

  • Drizzle over blueberry muffins
  • Pour over a bundt cake
  • Spoon onto scones
  • Pour over a lemon loaf cake
  • Drizzle on pound cake
  • Dip sugar cookies in it
  • Use on pancakes instead of syrup

A Shiny Finish That Sets Just Right

When you first drizzle the glaze over your dessert, it will be glossy and smooth. As it dries, it firms up to a thin, dry-to-the-touch coating, and becomes a bit more matte. The glaze will take a few minutes to dry, depending on how thick you made the glaze and the temperature of the dessert that you’re adding it to. Letting the glaze dry creates a sweet, lemon finish to your dessert that stays in place and won’t leave a sticky mess.

Equipment

No special equipment is required for this recipe, though I do find that a handheld juicer makes juicing lemons more efficient.

Ingredients
  

  • 2-3 tbsp freshly squeezed lemon juice
  • 1 cup powdered sugar
  • lemon zest optional

Instructions
 

  • In a medium bowl, whisk powdered sugar and lemon juice until smooth.
    Optionally, add lemon zest for more lemon flavor.
  • Add more lemon juice or powdered sugar until desired texture or fluidity is achieved.
  • Drizzle over cakes, pastries, cookies, etc.
