Add flour, baking powder, baking soda, and salt to a bowl and mix to combine.
Grate cold butter into the flour mixture. Mix to evenly disperse butter.
Mix buttermilk and honey together. Pour into flour mixture.
Mix until just combined.
Transfer dough to a lightly floured surface and use your hands to work the dough until it just comes together.
Optional: Fold dough in half and press down. Rotate 90°, fold in half again, and press down. Repeat (rotate, fold, press) 3 more times. (This creates a flakier biscuit with layers)
Press until 3/4 inch thick.
Cut into 8 biscuits.
Bake on a skillet or baking sheet for 12 - 18 minutes or until golden brown.
Optional: brush with melted butter while still warm.
