These nut-free cookies have all of the delicious qualities of traditional florentine lace cookies. They are thin and crispy with a caramelized, toffee-like flavor, making the perfect home for a layer of rich chocolate.
Add in vanilla, baking soda, and salt. Mix until well combined.
Mix in flour until combined.
Roll dough into 1-teaspoon-size balls and place on a parchment-lined baking sheet 3 inches apart.
Bake for 10 minutes. The cookies should have little holes and be evenly browned.
Allow to cool for several minutes before moving to a wire rack to cool completely.
Assembling the Cookies
Microwave the chocolate in short intervals, stirring in between, until fully melted.
Hold a cookie flat-side up. Spoon a thin layer of melted chocolate onto the cookie, then top with a similarly sized cookie. Place on a parchment-lined baking sheet to set.
Notes
Butter - You may notice that this recipe calls for "extra softened" butter. This is an important note because the temperature of the butter can impact the final cookie. If the butter is too cold, the cookies may not spread enough to create that thin and lacy texture that we want. The butter should be smoother and more spreadable than standard softened butter -- especially in colder weather or kitchens. A helpful way to think about it is in the context of white bread. The butter should be soft enough that you would be able to spread it easily over the bread without it tearing.
