S’mores brownies are the perfect summertime dessert! A rich chocolate brownie sits on top of a buttery graham cracker crust. Marshmallows are added before baking, allowing them to toast perfectly in the oven, resulting in a delightful s’mores treat!

Tips for Making S’mores Brownies

Pre-bake the Crust – baking the crust for a few minutes helps it set a bit before spreading the brownie batter on top.

Whisk the Eggs and Sugar Well – whisking the eggs and sugar well is the key to getting that thin crackly top on brownies that we all love. Make sure to whisk the sugar and eggs very well until the mixture is pale and fluffy. You may need to whisk for 2-3 minutes to get to that point.

Alter to your liking – you can choose to add milk chocolate chips, chopped milk chocolate, large marshmallows, or even more mini marshmallows than the recipe calls for.

Don’t Overbake – be careful not to overbake these brownies. Take them out of the oven when a toothpick inserted about an inch from the corner comes out with a couple crumbs. Overbaking will cause them to be dry and less rich in flavor.

Why don’t my brownies have a crackly top?

It’s likely because the eggs and sugar weren’t whisked enough before adding the rest of the ingredients. You want to make sure you whisk the eggs and sugar together very well until the mixture is pale and fluffy. This helps the sugar dissolve into the eggs and creates almost a meringue, which rises to the surface during baking to create that thin, crackly crust.

Do I need to line my pan with parchment paper?

You can grease the pan instead of using parchment paper, but parchment makes removing the brownies super easy.

Can I use regular marshmallows instead of mini?

You can absolutley use regular sized marshmallows on top of the brownies instead of mini for extra marshmallow flavor.

Can I mix mini marshmallows into the batter?

You can mix mini marshmallows into the batter, but they will dissolve during baking leaving little air pockets in the brownies.

Can I add milk chocolate chips or a chopped milk chocolate bar?

Equipment

This recipe calls for dutch-process cocoa, which can be found in most grocery stores. If you’re unable to find it in-store, you can find some on Amazon, like this one from Anthony’s. Lining the pan with parchment paper makes removing the brownies a breeze. You may enjoy having an electric hand-mixer if you don’t want to whisk the eggs and sugar by hand. Whenever I make any batter, I enjoy using a rubber scraper to get every last bit out of the bowl.

Ingredients
  

Graham Cracker Crust

  • 5 tbsp (71 g) butter, melted
  • 2 tbsp (25 g) sugar
  • 1 ¼ cup (125 g) graham cracker crumbs*

Brownies

  • 2 eggs
  • ½ cup + 2 tbsp (120 g) sugar
  • 3 tbsp (43 g) butter, melted
  • 2 ½ oz (70 g) dark chocolate
  • 2 tbsp (20 g) neutral oil
  • ¼ cup + 2 tbsp (40 g) dutch-process cocoa powder
  • ½ cup (60 g) flour
  • 1 cup (45 g) mini marshmallows

Instructions
 

  • Preheat oven to 325℉.

Graham Cracker Crust

  • Mix melted butter, sugar, and graham cracker crumbs until well combined.
  • Press into a parchment-lined 8 x 8 baking dish.
  • Bake for 5 minutes.

Brownies

  • Whisk eggs and sugar until light and airy.* Set aside.
  • In a separate bowl, combine melted butter and chocolate and mix until smooth. You may need to microwave in 15 second intervals, mixing in between, to get chocolate to melt into the butter.
  • Add chocolate mixture to egg mixture and mix until combined.
  • Add oil and mix until combined.
  • Mix in cocoa powder.
  • Fold in flour until just combined.
  • Spread batter evenly over crust. Top with marshmallows.
  • Bake for 25 – 30 minutes or until toothpick inserted an inch from the corner comes out with a couple crumbs.

Notes

Graham Cracker Crumbs – about 9-10 graham crackers should yield 1 ¼ cups crumbs.
