How These Peanut Butter Cookies Differ

Traditional peanut butter cookies (you know the ones with the fork imprints) tend to be a bit dense and dry. Don’t get me wrong, the traditional cookies are still super delicious! For this peanut butter cookie recipe, however, I wanted them to be soft and light. That’s exactly what these cookies are. They are full of peanut butter flavor, but are softer and more moist than a standard peanut butter cookie. They even pack in some extra peanut butter flavor with the addition of peanut butter chips.

Creamy Peanut Butter

When making this recipe, I used traditional creamy peanut butter. Think brands like Skippy and Jif. This type of peanut butter is more reliable in baking since they’re more similar brand to brand. Natural peanut butter tends to separate and can cause differing results when used in baking. For best results, use a traditional creamy peanut butter for this recipe.

Peanut Butter Chips

I love the addition of peanut butter chips in this recipe. They add extra little bursts of peanut butter goodness throughout the cookies that is just so yummy! For an even prettier final result, once the cookies are scooped and placed onto a baking sheet, you may want to add a few additional chips to each cookie dough ball. This way, once they’re baked, you’ll have some easy-to-see peanut butter chips on the top of each cookie. It’s also a great way to have the cookie flavor be easily identifiable; super handy for cookie boxes or when bringing them to a social gathering.

Ingredients
  

  • ¾ cup (1 ½ sticks) (170 g) butter, softened
  • ¾ cup (165 g) dark brown sugar
  • ¼ cup (60 g) sugar
  • ¾ cup (195 g) creamy peanut butter (such as Skippy or Jif)
  • 1 egg
  • 1 tbsp vanilla extract
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ½ cups (180 g) flour
  • 1 cup (160 g) peanut butter chips

Instructions
 

  • Preheat oven to 350 ℉.
  • Cream together butter and sugars.
  • Add peanut butter and mix until combined.
  • Add egg, vanilla, baking soda, and salt. Mix until well combined.
  • Mix in flour until just combined.
  • Mix in peanut butter chips.
  • Scoop 2 tbsp balls of dough onto a prepared baking sheet.
  • Bake for 10 minutes or until bottom edge just starts to brown. Allow to cool for 1-2 minutes before transferring to a wire rack to cool completely.
